I love marshmallows and anything marshmallowy, so I came up with this homemade version of an Arnotts chocolate royal...
Chocolate Royals
115g butter or margarine, softened
1 cup sugar
1 egg
1/4 cup milk
1 tsp vanilla
1 3/4 cups plain flour
1/3 cup cocoa
1/2 tsp bicarb soda
1/2 tsp salt
20 marshmallows
1/4 cup dark choc melts, melted
Cream butter and sugar.
Add egg, milk and vanilla, mix well.
Combine flour, cocoa, bicarb and salt. Beat into creamed mixture.
Drop rounded teaspoonfuls into baking paper lined trays.
Bake at 180 degrees for 8 minutes.
Meanwhile, cut marshmallows in half.
Press a marshmallow half, cut side down, onto each cookie.
Return to oven for 2 minutes.
Cool completely on a wire rack.
Place melted chocolate into a small snap lock bag.
Snip off the tip of one corner to make a piping bag.
Drizzle chocolate over biscuits, allow to set.
I too have a weakness for marshmallows... I can't wait till I can find time to make those!

ReplyDeleteI love all your recipes Toni! I pop on your blog for ideas all the time (actually made your cookies this afternoon), and feel very priviledged to have my own "Toni's Recipe Book" in my kitchen (such a thoughtful gift from you all those years ago!)
