Raspberry and Apple Muffins
(recipe from The Raspberry Farm)
300g self-raising flour
120g brown sugar
2 eggs
3/4 cup olive oil
2 cups milk
250g raspberries (fresh or frozen)
150g pie apple
Combine flour and brown sugar in a large bowl.
In seperate bowl mix together eggs, oil and milk.
Combine both mixtures together along with raspberries ad apples. Stir until just combined.
Divide between muffin holes.
Bake in moderate oven 15 - 20 minutes or until cooked through.
They look yum and sound easy! Might even give them a go in my spare time ;)
