Another yummy recipe from my friend Kelly Peihopa...she made this for us when we went for dinner ages ago and we have made it heaps since. I like it because it is a nice fresh pizza and not greasy at all.
Mango and Chicken Pizza
1 pizza base
1 tin mangoes, drained
2-3 tbs dried mint
3cm piece fresh ginger, grated
raw chicken breast, cut into strips
Mash mangoes, mix with lots of dried mint and grated ginger.
Spread salsa onto a pizza base. Sprinkle with some grated mozzarella cheese.
Top with snow peas, pine nuts, capsicum and chicken, then sprinkle a little more cheese over the top.
Bake in oven for 30 minutes to an hour until pizza base and chicken are cooked.
