.Recipe Monday.

Another recipe and photo courtesy of Taste. We have been enjoying this salad a bit lately. It doesn't take long to prepare and everyone seems to like it.

Chicken Caesar Salad
4 rashers bacon, rind removed, cut into 2cm pieces
2 slices white bread, cut into 1cm cubes
4 chicken breast fillets
1 large cos lettuce, leaves washed and broken
4 eggs, hard-boiled, cut into wedges
Caesar salad dressing (you could make your own but I bought a nice one to make it easier)

Cook bacon in a non-stick frying pan over medium-high until crisp. Remove and drain on a paper towel.
Add bread to frying pan. Cook for 3 minutes or until golden and crisp. Remove to plate with bacon.
Reduce heat to medium. Add chicken to pan. Cook for 4 minutes each side or until cooked through. Stand, covered, for 10 minutes. Slice chicken diagonally.
Arrange lettuce in a serving bowl. Top with chicken, bacon, bread and eggs. Drizzle with dressing. Season with salt and pepper and serve.
