These muffins taste like a sticky date pudding and the raw apple pieces add a delicious, crunchy texture.
Sticky Date and Apple Muffins
100g dates
1 medium apple (sometimes I cut up 2)
80g butter, melted and cooled slightly
3/4 cup self-raising flour
1 tsp baking powder
1/2 cup brown sugar
1/4 cup coconut
1 egg
1/4 cup sour cream
Cut dates into small pieces. Peel and cut the apples into small cubes.
Sift flour and baking powder into bowl. Stir in sugar and coconut.
Add egg and sour cream to butter, whisk well.
Fold fruit and wet ingredients into dry ingredients.
Spoon mixture into greased mini or regular muffin pan.
Bake for 20 minutes (in regular pan), 12 minutes (in mini pan), or until golden brown and firm.
