.Recipe Monday.

For thick and fluffy pancakes next weekend, try this recipe...

Buttermilk Pancakes
2 cups self raising flour
1/3 cup caster sugar
2 eggs, lightly beaten
600ml buttermilk (you can buy this...I make my own by adding 1Tbs vinegar to 1 cup milk)
50g butter, melted

Sift flour and sugar into large bowl.
Whisk eggs, buttermilk and melted butter in medium bowl.
Gradually whisk egg mixture into flour mixture. Whisk until mixture makes a smooth batter. Transfer batter to a large jug.
Cover, refrigerate batter for 30 minutes.
Lightly spray large heavy-based frying pan with cooking spray. Pour 1/4 cup batter into heated pan for each pancake.
Cook pancakes, uncovered, until bubbles appear on surface. Turn with a spatula to lightly brown other side.
