.Recipe Monday.

This is a BULK batch of chocolate chip biscuits. Mum would make these when we were kids and put most of them into bags in the freezer and pull out a bag for school lunches. They are bulked up with rolled oats so a little more healthy than regular choc chip bikkies. Of course, if you don't want to make so many biscuits you can just halve the mixture :)

Chocolate Chip Biscuits
450g butter
1 1/2 cups brown sugar
1 1/2 cups white sugar
2 tsp vanilla
4 eggs
3 1/2 cups SR flour
2 tsp salt
1 1/2 cups nuts (optional)
250g chocolate chips
1 1/2 cups coconut
4 cups rolled oats

Cream together butter and sugars in a very large bowl.
Add vanilla and eggs, beat well.
Add remaining ingredients and mix well.
Drop spoonfuls of mixture onto cookie trays and bake in moderate oven for 10-12 minutes.
