Recipe Monday (I almost forgot...)

Time for another spectacular recipe...
I made this recipe up a few months ago, and it worked out really well so it has been made and enjoyed in our home a few times since. The quantities of ingredients are kind of guessed, so just adjust things according to your taste and what you like.

Roasted Tomato Pasta Toss

6 tomatoes
sugar
1 packet fresh fettuccini
1 bunch basil
2 cloves garlic, crushed
salt and pepper to taste
2T olive oil
2T balsamic vinegar
1 bag baby spinach leaves
5 rindless rashers bacon, diced
¼c parmesan cheese

Chop tomatoes into quarters. Place on tray lined with baking paper. Sprinkle with sugar.
Bake in 200°C oven for 15-30 minutes or until soft and mushy.
While tomatoes are cooking, cook pasta in boiling water until tender.
Place tomatoes, basil, garlic, salt, pepper, oil and vinegar into food processor.
Process until thin. Add some extra sugar or salt or pepper to taste.
Cook bacon in microwave in covered dish until crispy.
Place drained pasta into a large bowl. Mix through tomato sauce, bacon, baby spinach and parmesan cheese.
