This recipe came from my Aunty Margaret. They are super sweet and very yummy, I made them in mini ice cream cones for Oscar's party on the weekend.
½c cold water
1c hot water
1t lemon juice
1t vanilla essence
Ice cream cones
Set cones out in a baking tray.
Sprinkle gelatine over cold water.
Place sugar and hot water in a large pan. Stir over heat slowly until boiling. Add gelatine mixture.
Bring to the boil, and boil uncovered without stirring for 15 minutes.
Remove from heat and allow to cool.
Add lemon juice and essence.
Beat with beaters on high speed until mixture is white, glossy and very thick.
Pour into cones and sprinkle with 100’s & 1000’s. Leave in fridge to set.
