These are our favourite muffins at the moment...
Apple and Blueberry Muffins
1 1/4 cups self-raising flour
1 cup wholemeal self-raising flour
1/2 tsp ground cinnamon
1/2 cup firmly packed brown sugar
3/4 cup milk
2 eggs
125g butter, melted and cooled
2 apples, peeled and cored
1 can bluberries, drained and lightly rinsed
Preheat oven to 190.
Sift the flours and cinnamon into a large bowl, add the husks and stir in the sugar. Make a well in the centre.
Put the eggs, milk and butter into a jug, whisk and pour into the well.
Fold gently until just combined - the batter should be lumpy. Fold in the fruit.
Divide amongst muffin holes.
Bake for 20 minutes, or until golden.
Cool for 5 minutes, then transfer to wire rack.

So Ella and i tried to make muffins last month...hmmmm wholmeal self raising flour NOT sifted and a little too much essence did not go down too well at all haha. Love u xx
