1/2 cup caster sugar
1/4 cup milk
1 1/2 cups self-raising flour
1/4 cup custard powder
1/3 cup coconut
2/3 cup icing sugar
2 tsp milk
1/3 cup jam
Preheat oven to 180 degrees Celsius.
Beat butter and sugar until light and creamy. Add milk, beat until combined.
Add flour, custard powder and coconut and mix to for a soft dough.
Roll two teaspoonsful of mixture into balls. Place on baking trays. Press with a fork.
Bake for 15-20 minutes, until just golden. Cool completely before filling.
To make filling:
Beat butter and icing sugar until light and creamy. Add milk and beat until combined.
Spread one biscuit with icing, and one with jam. Sandwich together.
