There is nothing better than comfort food on a cold, rainy day...we've been having lots of those lately, so I thought I would share my recipe for homemade gnocchi - it does take a little bit of preparation time, but it definately worth it! You can serve it with any pasta sauce.
1kg potatoes, unpeeled
2 egg yolks
¼c grated parmesan cheese
1-1½c plain flour
Pierce potatoes in several places. Microwave on HIGH power for 15 minutes or until tender. Allow to cool. Peel and mash in a large bowl. Mix in yolks and cheese.
Gradually add flour until a soft dough is formed, mixing with hands (only use as much flour as is required). Knead gently on a lightly floured board.
Divide dough into 6 equal portions. Roll each out into a long rope about 1.5cm thick. Cut into 1.5cm lengths.
Shape by rolling with a fork. Dust in a little flour.
Bring a large saucepan of water to the boil, with a little salt added. Add gnocchi in batches. Stir and returnto the boil. Gnocchi are cooked when the rise to the surface. Remove with a slotted spoon. Continue with remaining gnocchi. Toss gently in pasta sauce and serve.
