.Recipe Monday.

Awhile ago I was searching for a good kiss biscuit recipe after my failed attempt.
I had some great recipes shared with me, all of them quite similar, so it seems I was the only one with the dodgy recipe!! Its been awhile since I made these, I think they might be on the agenda again soon.
Nanna Cooper's Kiss Biscuits
1/4lb butter
2 eggs
1 tsp cream of tartar
1 cup sugar
2 cups plain flour
1/2 tsp bicarb soda

Beat the butter and sugar.
Add eggs and beat well.
Add sifted flour, cream of tartar and bicarb soda.
Roll out thin and cut into shapes. (To get them thin and not risk breaking them when transferring them to the tray, I rolled the mixture between two sheets of baking paper, peeled off the top sheet and cut my shapes on the bottom sheet. Then took away the excess mixture, leaving the shapes on the bottom sheet and slid that sheet onto the baking tray - does that make sense?!!)
Bake in a quick oven until light brown...not really sure what that meant, but I put them in a moderate oven and checked them till I thought they were ready!
Stick together with raspberry jam and ice tops.
